Managed Server Version 5: Disable Composer Selfupdate

Years ago, Composer was installed with selfupdate enabled on all version 5 servers. This worked fine until Composer began to update itself to version 2.0dev starting last week. As this led to undesired behaviour on outdated installations, we will pin Composer to the current version 1.10.5 on all version 5 servers for the time being.
